Clout Coffee Sourdough with Chocolate and Caramel Chips

There's something special about combining two slow-crafted traditions—artisan coffee and sourdough.

This Coffee Sourdough Bread brings together the bold character of freshly brewed Clout Coffee with the subtle sweetness of caramel and rich chocolate chips. The coffee deepens the flavor of the loaf without overpowering it, creating a bakery-style bread that's perfect toasted with butter, served alongside your morning coffee, or enjoyed as an indulgent afternoon treat.

Ingredients

  • 500g all purpose flour
  • 100g active sourdough starter
  • 350g cooled brewed Clout Coffee (replace the water)
  • 10g salt
  • 100g semi-sweet chocolate chips
  • 75g caramel baking chips

Instructions

  1. Mix the flour, cooled brewed coffee, salt and sourdough starter until combined. Let rest for 30 minutes.
  2. 4 sets of stretch and folds every 30 minutes.
  3. During your stretch-and-folds, gently fold in the chocolate and caramel chips.
  4. Bulk ferment until the dough has risen and become airy.
  5. Shape the loaf and refrigerate overnight for a cold proof.
  6. Bake in a preheated Dutch oven at 450°F with the lid on for 30 minutes, then remove the lid and bake an additional 15–20 minutes until deeply golden.

Why Brewed Coffee?

Replacing water with brewed Clout Coffee adds another layer of complexity to the loaf. The coffee enhances the chocolate notes while balancing the sweetness of the caramel, resulting in a rich yet surprisingly smooth flavor.

Baking Tip

Always allow the brewed coffee to cool completely before mixing your dough. Hot coffee can affect your sourdough starter and fermentation.
